ROOT BEER FLOAT CUPCAKES – The Scran Line


Hey guys, I’m Nick and on this episode of The Scran Line I’m going to show you guys how to make these root beer float cupcakes For those of you who don’t know what a root beer is It’s basically the combination of soda and a scoop of ice cream These cupcakes are the perfect way to celebrate summer and they make the cutest addition to a 60s diner-themed party I didn’t actually add ice cream into this recipe, but you can add it into the wet ingredients if you like I’m going to show you guys how to make them Let’s get stuck into the recipe Okay guys so start off by popping all of your dry ingredients into a large mixing bowl So your flour, sugar, baking powder, and salt Mix those until they’re well combined Then you want to add your softened butter Mix that until it reaches a sand-like texture While that’s mixing add your root beer to a large jug Now you can use any kind of soda you like I’m using root beer, along with your eggs, vanilla Greek yogurt, and whisk that up Now you want to add that to your dry ingredients in a slow and steady stream Once it’s all in there stop your mixer and scrape down the bowl You want to add some molasses and then you want to mix for a final 20 seconds We’re going to scoop these into our cupcake liners filling them up about 3/4 of the way Then you want to bake them for about 25 to 30 minutes Then you want to transfer them to a cooling rack Now to make our swiss meringue frosting you want to put a pot of boiling water on the stove get that to a slow simmer Add a glass or a metal bowl on top, preferably not plastic You want to add your egg whites and your brown sugar in there whisk it up You’re going to continue whisking over that boiling water until the sugar is completely dissolved So when you can feel none of it between your fingers, it’s time to take it off Now I’m using a hand mixer to mix this up We’re going to whip it until it’s nice and stiff it will lighten in colour And you want to get it nice and thick and glossy Now I’m going to paint some molasses on the inside of my piping bag I fitted the end with a Wilton 1m tip and I’m gonna frost it in a swirl Finish it off with a Maraschino cherry on top And guys, that’s pretty much it Okay guys So those were my root beer float cupcakes I hope you enjoyed watching this video if you did Hit the like button and make sure you subscribe If you want to make these root beer float cupcakes you can find the recipe on my website thescranline.com I hope you guys enjoyed watching this video I’ll see you all on the next episode of The Scran Line
