Lemon, White Chocolate and Raspberry Cake – Food with Chetna

Hello everyone and welcome to Food with Chetna today I’m going to make a lovely fresh
summary celebration cake it is really light sponge and we are going to add some lemon to it and white chocolate and then decorate it with some fresh rasperries so I will start with the sponge and for that I’m going to have 200 grams of softened unsalted butter and to this I’m going add 200 grams of caster
sugar and 200 grams of self raising flour and 1
teaspoon of baking powder to this I’m going to add 4 large eggs now to get the freshness from the lemon I’m going to add
the zest of 2 fresh lemons now I’m just going to beat it for a couple of minutes just to make the mix really light and fluffy and it
will go cream in color I’m going to add 75 grams of chopped white chocolate and you can
just throw that in here I’ve got 2 seven inch cake tins just gonna divide it equally in both the tins just spread it out so I will bake these at 180 °c for roughly 25 – 30 minutes
and I’m going to check it with a skewer if it comes out clean that means
it’s ready take them out and let them completely
cool down because to do the icing the fresh cream they just
need to completely cool before you start doing that I am going to divide them in half so
then we can have 4 delicious layers of the cake what I’m going to do is I’m going to first whisk the cream so I have taken 600 ml of double cream and to this I’m going to
add 4 spoons or caster sugar and then just give it a good whisk you just want the right consistency I’ve got the first layer down and I’m going to put
2 tablespoon of lemon curd on it and just spread it quite thin and then I’m going to add the second layer and just put lots of cream then goes the third layer and another 2 tablespoon of lemon curd I absolutely love lemon curd and its so easy to make at home if you don’t want to make it you can buy a ready made jar then I’m going to put the last layer on, more cream now I’ve got around 300 grams or fresh rasperries start from
one side some I’m just gonna finish it nicely with
a dusting of Icing Sugar here it is your Raspberry Lemon and white chocolate cake enjoy and if you
