Hello friends welcome to “Madras Samayal” Today lets see how to make our favorite Ice Cream We can make it 3 ways With eggs, Custard powder or with Cream Since cream is hard to fine in our local stores I am going to make with milk Today I am going to make base with eggs , next week I will upload a video with custard powder I have taken 1 liter of full fat milk Transfer this to a heavy bottom pan We need to cook until the milk reduces to half (500ml) Cook on medium heat, stirring occasionally It takes approximately 35-45 minutes on medium heat. Now after 45 minutes milk has reduced to half Turn off the heat and transfer it to a stand In the meanwhile lets prepare egg base We need 3 eggs yolks for this recipe we also need 3/4 cup (150g) of sugar Whisk until it turns pale yellow Once done gradually add some milk and beat together Add 2 tbsp of butter to add creaminess to the recipe. Now gradually add the egg mixture and stir well Gradually add the egg-milk mixture and stir well. Turn on the heat to medium and cook until it thickens Now after 7 minutes the mixture has thickened Turn off the heat and add 1 tbsp of vanilla extract. Pass it trough a filter to collect any solid particles Perfect Once cooled store it in an air tight container and freeze Air tight box prevents ice deposits Freeze if for 2- 3 hours Now after 3 hours, lets blend Freeze it for another 3 hours Now you can see its thick, lets beat them again Freeze it again and repeat 2 more times Beat it for every 3 to 4 hours ( total of 4 times) Now I am going to caramelize some cashews Melt 1 tsp of ghee Add broken cashews and roast until golden Now to this add 2 tsp of sugar and roast until it become golden brown Once cooled break it into tiny pieces Add it to the ice cream and freeze it gain Freeze it again and serve 🙂 That’s it our delicious homemade ice cream is ready to be served.
