I am going to show you how to make Guinness and Baileys cupcakes which are perfect for St. Patrick’s Day, but also just if you want
to like drink your booze and eat your dessert at
the same time, which I do, and now you can too. (upbeat music) Subscriber of the week

a poll on my instastories and I asked if you guys
wanted an Irish stew or Guinness and Baileys cupcakes. And even though I hate
baking and you know this, you guys picked cupcakes, so we’re here and we’re making cupcakes. So Guinness itself is not vegan
but you can do this recipe with any dark stout that you want, and a lot of them are vegan. All you have to do is
just go to and type in the one that you’re looking at and it’ll tell you if it’s vegan or not. So I picked this one, it is vegan, and we are going to put
that into a saucepan with some vegetable oil and
heat it up until it’s boiling. Now that it’s boiling, we are
going to add some cocoa powder and whisk that together and
take it off the heat right away. All right, now that we have
our chocolate, beer, oil situation, we’re gonna set
that aside, and we are going to mix together the dry ingredients. So we’re gonna add one cup
of flour, one cup of sugar, 3/4 teaspoon of baking soda,
1/2 teaspoon of baking powder, 1/4 teaspoon of salt, and we’re
gonna whisk it all together. I’m just gonna set that
aside because now we’re going to do our wet ingredients. Now I mixed together a flax
egg which is one teaspoon of flax with three teaspoons of water. We’re just gonna let that
sit for five minutes. Now that that’s nice and
gelatinous, we have our flax egg. I would add 1/3 of a
cup of coconut yogurt. You can use sweetened or unsweetened. I’m using unsweetened. You can also use cashew or
almond or soy, if you want. It’s really up to you as
long as it’s just a yogurt. We’re just gonna mix that together. Now if you have a handheld
mixer, you can use that, but I have this beautiful
stand mixer, and I’m just gonna use it ’cause I don’t
have to use my hands. They’re very delicate. No, it’s just it’s I’m lazy. Now that it’s mixed, we’re
going to add the chocolate, beer, oil concoction
that we had on the stove and again, you guessed
it, whisk it or blend it or mix it together. We have this like yogurt,
chocolate, and beer concoction which I will be honest does
not taste good right now. So if you want to taste
test with your pinky, don’t do it now. Wait until it really tastes good. We’re gonna do that by
adding the dry ingredients ’cause it has sugar in it, and sugar makes everything taste better. Add that in and then, you
guessed it, we’re gonna whisk, we’re gonna stir, we’re gonna do a little shimmy like Hillary. And that’s how easy it is to make batter. I know, why do I hate
baking, ’cause I burn things, but it’s really not that hard. We have this beautiful batter which now you can taste test if you want to. We’re gonna put it into cupcake liners. So just get yourself a
cupcake or muffin tin, and then we are going to add our batter to the cupcake liners. So you want to fill them
up only 3/4 of the way because they will rise. Put these guys into the
oven at 350 for 22 minutes and then we will have
cupcakes. (excited yelling) I love cupcakes. I don’t always love making them,
but I do enjoy eating them. You know what else I enjoy consuming? Beer, see you in a couple minutes. While the cupcakes are baking,
I am going to make frosting because you cannot have delicious cupcakes without delicious, fluffy, white frosting, or green frosting if you want
to like add some spirulina or green food coloring in there if you’re into food coloring. But I’m not really into that,
plus like green’s kinda tacky, except for this shirt. This shirt is great. To make the frosting,
I’m going to add 1/2 cup of vegan room temperature butter, three cups confectioners sugar
added at 1/2 cup intervals, and then three tablespoons
of vegan Baileys. Now you can buy vegan
Baileys at the grocery store or you can make your own. I have a recipe on how to do that. I will leave a link in
the description box below and you can make your own. Mmm, so good. Now that we have our
frosting, I’m gonna stick it into the fridge until our
cupcakes are nice and cold. Okay, it’s been 22 minutes,
our cupcakes are ready to go. Let them cool either on
a wire rack or in the pan for about an hour minimum or until they’re cold to the touch. You don’t even want them
to be a teensy bit warm or else when you frost
them, the frosting is just gonna melt all over the
cupcake and you’re just gonna have a goopy, gloopy, gross mess. All right, guys, let’s watch
me screw up this cupcake because I’m terrible at decorating them. Start from the inside, go
to the outside, and swirl. Yes, actually not a bad job. All right, guys, there you
have it, delicious Baileys and Guinness, without the
actual Guinness, cupcakes. It’s so pretty. I’m actually very impressed with myself. I would actually serve
these to other people and not just eat them alone in my bed. Oh, my god. You have to make this, it’s delicious. If you’re going to like
a St. Patrick’s Day party or hosting a party or
just want to celebrate but you worked that day so
you’re not going out that night, you can just eat these

You're so real, with approachable recipes, which is very helpful for people just going vegan. I've been lacto-ovo for about 28 years, but people like you inspire me to reach farther.

    Anyway, I had a question: Do you know, is this a riff on red velvet? That originally had red wine as an ingredient, but over time, anti-alcohol people swamped the recipe with fake ones, just adding food coloring, till you almost can't find the original. I don't know if the cream cheese icing/frosting originally had a liquor in it or not, but I suspect it may have had. Perhaps triple sec (orange), or amaretto di Sorrono? Maybe a raspberry brandy? See? You got me inspired and thinking. Now I need to go look up how to make vegan cream cheese…

  11. I found out that Guinness has some vegan products. If it's brewed in Australia, it's vegan. If it's the Blonde American Lager, it's also vegan. Other than that I don't think there's any other Guinness that's vegan.

  13. Guinness is not vegan. It is made with Isinglass (a substance obtained from the dried swim bladders of fish) to help filter the beer
