FRANZBRÖTCHEN – German Cinnamon Pastry

Dough: 375g all-purpose flour. 5g instant dry yeast. 25g sugar. 8g vanilla sugar. 5g salt. 180ml warm milk. 50g softened unsalted butter. Mix Knead for 8 – 10 minutes (a mixer with dough hook) Cover at warm place for 45 minutes Flatten the dough into a thin rectangle. my dough is 40×25 cm 125g unsalted butter I do it this way, you might do differently. The point is to make a laminated dough. Roll out and fold for 3 – 4 times and rest in the fridge to protect the butter from melting. About 40×60 cm Brush the surface with water 100g sugar (less/more). 1 tbsp ground cinnamon. Mix well Sprinkle the cinnamon sugar to the dough evenly Roll the dough into a log Slice into two Cover and store in the fridge for 30 minutes. Will firmer and easy to slice Slice into 12 (5 cm wide) Using a wooden spoon handle, press the dough in the middle, parallel with the roll. Put on the baking tray & cover for 30 minutes. Dab with egg Bake for 20 minutes at 200°C preheated oven

    I have a question, do you have to rest the dough after every folding ( the 3-4 times)? Or is it enough to just fold them continously 4 times, and then rest it in the fridge?
